On 21 September 2026, the International Olive Council (IOC) took part in the opening ceremony of the 23rd International Course for Experts in Virgin Olive Oil Tasting, held at the University of Jaén until 11 December 2026.
This specialised training in sensory analysis brings together olive-sector professionals from many countries, aiming to harmonise assessment methods and strengthen the quality of olive oil worldwide. For the 2026 edition, the IOC awarded 30 scholarships to professionals from 14 of its member countries.
Elia Fuster Rius, founder of L’Atelier des Saisons, is taking part in this 2026 edition of the course.
